Keto Cauliflower Soup

I just love soup and as soon as the weather gets a little colder, I am ready! The problem is that so many store bought soups are loaded with sodium or sugar, and if they aren't, they are super expensive. I can't tell you how much money I have wasted on soups that were just not great. No thanks, I'll make my own.



This is just one variation of cauliflower soup that I came up with and it was so good! Ingredient list and macros are below. Enjoy

Step One:

Saute bacon in a large pot.


Step Two:

Once the bacon has cooked, remove bacon with slotted spoon and set aside. I then add my EVOO and cook up my garlic and onions until the onions are translucent. 


Step Three:

I add uncooked cauliflower, canned carrots, and the chicken and beef broth to the pot. Cover and then bring everything to a boil and cook over medium heat until the cauliflower is tender. 





Step Four:

Once the cauliflower is cooked, you want to use a hand blender and pulse your soup until almost smooth. 




Step Five:

Add butter, cheese, salt, pepper, and heavy cream and continue to mix with your hand blender.




Blend until smooth!



You can top your soup with the bacon crumbles, freshly grated cheese, sour cream, or anything you would like. The carrots give it a little sweeter of a taste but it still works so well!

Chicken Broth, Bouillon Or Consomme, Homemade
1-½ cup

Bacon, Pork
4 slice - 6" long

Olive Oil
3 tablespoon

Cauliflower, Raw
2 medium - head - 5" to 6" diameter

Beef Bone Broth Gluten Free 
2 cup

Onion
½ medium - 2 1/2" diameter

Minced California Garlic 
2 tablespoon

Carrots, Canned, Drained
1 cup, sliced

Heavy Cream
⅓ cup

Butter
2 tablespoon

Extra Sharp Cheddar Cheese (I use a kind that has parmesan notes)
8 oz
