Atkins Scrambler

Since being on Atkins I have a new found love for eggs. I eat them all sorts of ways but I love making 'scramblers'. I scramble up some eggs and cook them with veggies, meats, cheeses...anything that's light on the carbs. My most favorite is my ham, egg, and cheese scrambler.


Four ingredients: Diced ham, bacon bits, eggs, shredded cheese. If you are cooking this for just you and as a meal you will need 3 eggs, 1/4 cup of ham, and 1 tablespoon of bacon, 1/4 cup of any shredded cheese you like (I prefer the mexi-blend). 


Scramble up your eggs and pour them into a hot pan and let them cook up for about a minute. Then sprinkle your ham and bacon onto the eggs. 


Then proceed to cook your eggs as you normally would cook plain scrambled eggs. Once your eggs are done, shut the burner off, sprinkle the cheese and cover with foil while the heat from the eggs melts your cheese.


Voila! This takes like NO time and is delicious. Induction friendly too! Total carbs: 2-3 net carbs (depending on how much cheese you like)!
