My Chili!

I love chili but I am a slight chili snob. I don't like every chili I come across. Some are way too spicy or cumin-y or beef stew-y ... this one is just right for me and the hubs (however he likes it a little spicier than I do). It's also super easy. Just throw all the ingredients in the crock pot and go about your business!

Stuff:

1 tablespoon brown sugar
1/2 teaspoon salt
2 cloves garlic, minced
1 onion, chopped
1-2 sweet potatoes, peeled and chopped into .5” pieces (about 1.5 cups)
28 ounce can crushed tomatoes
2 teaspoons smoked paprika
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce (I used about ¾ of a can)
1 8-10 oz cans of corn kernels
1 14.5-oz can diced tomatoes w/chilies
1 tbsp cumin
2 tbsp chili powder
¼ to ½ pound ground lean turkey – if you like super meaty add more

How-to:
Add all the ingredients into a crock pot – mix well and cook for 6-8 hours on medium or over medium heat for a couple hours on stove. I always mix it every hour or so in the crock pot so it cooks evenly. This recipe is NOT that spicy. If you like spice add fresh jalapenos or chilis (chopped) and more chili powder …

Top with:
Shredded cheese
chopped fresh cilantro

Enjoy!!
